Since a number of people have been asking me for an answer, I thought I’d post it here.

The post on the “layered cake” technique (above) and the following article at Cookie magazine are the two references I’ve found thus far. I am looking for a definitive reference on the subject.

Then there are the questions on “tagging” multiple layers. My guess is that this could be called “casting”: could you start the actual layer with a de-glaze (that would be laying) and then so have the rest of the layers. (I do this and have never gotten anywhere with it.)

The above article also suggests that it is easier to tag multiple layers as you’re laying them (thereby de-glazing) and then save the cake in another container for baking. I don’t really like this technique, for two reasons:

It requires more work and fiddling with.

I always feel that I’ve cheated my cake by deceiving the palate into thinking it’s on the second half of the cake when in fact it’s just a filling.

If you’re using a de-glaze, I’d gently fold the layers from the bottom of the cake to the top and *then* backfill them with the de-glaze. I really like doing it this way for stability. You get more control of the tiers, and you’re not “tagging” the top of the cake.
